Ginger Lemon Cauliflower Rice

Ginger Lemon CauliflowerWhile I was on the Whole30 Program last month, I ate a lot of vegetables…of course.  But, I’d get tired of the same old thing.  So, I got creative and used a variety of herbs, spices and prepared my vegetables with different techniques.  Thank goodness for the internet, otherwise I would have never dreamed of putting raw cauliflower in the food processor to make “rice.”

This Ginger Lemon Cauliflower Rice
is a refreshing side dish that is puts a great spin on boring, steamed cauliflower.

Ingredients:

1/2 head cauliflower

Fresh ginger root (thumb sized piece)

1/2 Lemon

Salt to taste

Pulse 1/2 head of raw cauliflower in the food processor until you have rice sized granules.

Shred (or use the food processor) a thumb-sized piece of ginger.

Mix the two and sautee in a skillet with olive oil or coconut oil until slightly tender.  It’s best still crunchy.

Squeeze the juice of half a lemon over the dish to serve.
