Menu Plan Monday with a New Slow Cooker Pork Tenderloin

Just a quick menu this week!  Trying a new recipe (pork tenderloin) and some old favorites (Girl Scout Stew).  Enjoy!

Menu Plan Monday: Featuring Mexican Chicken Roll Ups

How is your summer menu going?  We still have a lot of grilling on the weekly menu!  I did put more creative thought into the menu this week and found some great ideas on Pinterest….Mexican Chicken Roll Ups and Veggie Bird Nests. 

We have a birthday this week…we are entering double digits!  The Third Grader Fourth Grader (*sigh*) turns ten.

I cannot believe it. 

For the big birthday boy, we are having pizza.  Snappy Tomato, The Beast

For the rest of the week, here is our menu.  We will be getting lots of goodies from our farm share this week, but I’m not sure what.  So, I’ve listed only main courses.  Also included is a recipe using our new Citrus and Savory rub on chicken kabobs!

Grilled Chicken Kabobs with Citrus and Savory Rub
Grilled Shrimp Kabobs Brushed with Butter and Lemon Juice
Grilled Tilapia
Veggie Bird Nest with Black Beans
 

Because I’m a BzzAgent, I get to try out lots of cool stuff.  This week I am trying Kroger Private Selection Citrus & Savory Rub on our chicken kabobs.  We used chicken, red onion and green peppers.

 
I rolled the chicken in the rub and put everything on wooden skewers. 
 
 
Grilled until cooked thoroughly.

 

The kabobs were perfect and had a very fresh, tangy taste.  You could really smell and taste the citrus, but it was not over powering.  The Fourth Grader and Baby Girl both ate the chicken, but Middle Child did not care for it.  My husband and I loved it.  There is a variety of rubs to try, so check them out soon!  It’s a great idea for grilling on the Fourth of July.

Menu Plan Monday

It is not Monday, but this is a menu plan. 

It’s the last week of school!  Woo hoo!  Call me crazy, but I like it when the kids are out of school.  No more homework, no more packing lunches, no more bus to catch…which we missed this morning, by the way.

This week we are doing lots of grilling thanks to the Husband.  Our grill was not in the best of shape…

There is nothing fancy this week and no links.  But, maybe it will give you a great idea to kick of your summer menu!

Menu Plan Monday

This week I’ve been pinning like crazy!  I’ve found lots of great recipes and a delicious way to prepare steak.  At least it sounds delicious and promises restaurant quality.  Our menu needed refreshing, so here goes:

Paleasagna (what the heck??  It’s really vegetable lasagna) and Fresh Vegetables
 
Roasted Potatoes and Peppers with Sausage
 
 
French Bread Pizza and Salad
 
 
Steak and more Asian Slaw with Ginger Peanut Dressing with Baked Potato

Menu Plan Monday

We are down to a week and a half before school starts.  I have mixed emotions.  While I am excited about getting back into a routine and having a little more time to myself (for laundry and cleaning….don’t be fooled……my days at the spa have long since ended), I am really going to miss our ‘summer’ friends, pool days and sleepovers.  But, I always look forward to Fall, the changing color of the leaves, nights in front of a fire pit and the holidays. 

This being the last full week of summer, I’d like make easy dinners that will have lots of leftovers for lunch.  Here’s what we are having.

Dinner at the Ball Game!  Free hot dogs for the kids.
Garlic Pesto Chicken and Pasta with vegetables
Grandma’s Saucy Meatloaf with green beans and mashed potatoes
Homemade Vegetable Beef Stew

Menu Plan Monday

School is almost over!!  I have mixed feelings.  I am not dreading having my kids home all summer.  Shocking, I know….especially with some of the stories I write about them.  I like having a different schedule for the summer….not having to run them back and forth to school or Cub Scout meetings or get them up early.  But, I don’t want them whining about playing video and computer games all the time when it’s 85 degrees out and they should be dribbling a basketball in my driveway or making a giant chalk drawing on my sidewalk. 

Since the school year is winding down, we have lot of stuff to do!  Teacher gifts, end of year programs, parties!  Oh my!  With that in mind, I’m planning simple, fast and kid friendly meals this week.  I also added a carryout pizza item….which I’ve never added as a menu item before…yes, maybe on the weekend, but not as a planned weeknight dinner.  This weekend we had Papa Murphy’s pizza, which seemed to be a lot more healthy and a lot less greasy than other restaurant pizzas.  I’m sure it’s not exactly low fat, but it is what it is. 

Here is our menu for the week: 

Grilled Pork Chops with Basil-Garlic Rub, carrots and salad
Taco bar, corn cakes and refried beans (the kids LOVE taco bar night)
Papa Murphy’s Pizza with salad
Grilled burgers, homemade sweet potato chips and Swiss chard
Slow Cooker BBQ, mac and cheese and fresh vegetables with dip

Menu Plan Monday

Technically, it’s still Monday!  Our t.v., phone and internet has been down the last 24 hours.  The technician came out today and fixed it….guess what he did?  He disconnected the network cord and cleaned it by blowing in it real hard.  Problem solved! 

Carmine’s Meatballs with pasta and salad
Chicken Taco Bar, fruit salad with mac and cheese
Baked pork chops, swiss chard with mac and cheese
Stay at Home Pasta (spaghetti noodles, 10 cloves of garlic, olive oil and parsley) and fresh vegetables
BBQ Slowcooker Chicken with peas and carrots
I just told my husband we are having BBQ Slowcooker Children…..I must be tired.  Or they must be driving me nuts…probably a little of both.

Menu Plan Monday

Something special happened last week.  We’ve been waiting a long time. 

We got our Carmine’s Family Style Cookbook in the mail. 

We checked out this cookbook at the library a while back and loved it so much we had to have it.  But, I am cheap, so it had to be the right price (translation:  used plus free shipping) and then I also used my Amazon points to buy it.  Did I mention I am cheap? 

Of course, this week’s menu has a Carmine’s recipe!  I can guarantee you that these recipes are not low fat, so I have to limit us to about one recipe a week (insert frowny face).  In fact, I may have gained a couple pounds just looking at the pictures.  Even Middle Child looked at one picture and declared it “Deeee-lish-ous!” 

The meatballs I made last week were the Carmine’s meatballs and to say they were fantabulous would be an understatement.  We had no leftovers that night.

Menu Plan Monday

I’m trying to make a come back with this menu.  A come back from the dark side.  The dark side of eating.  Can you guess why?

The Thurmanator……2 lbs of meat…bacon, ground beef, and ham.  Quite a menagerie!

We had an awesome couples weekend with friends sans kids.  I got to eat, drink and be merry.  A little too much.  So, with that in mind, this week’s menu is pretty healthy, yet basic.  After eating so many wonderful and gluttonous foods (think homemade potato chips covered in Alfredo sauce with blue cheese) it was kind of hard to think of light and healthy fare.  I searched menu boards, pinterest, other blogs…..I got bored.  And hungry. 

I would love to hear your favorite quick and healthy meal! 

Sauteed Chicken and vegetables with wild rice
Skillet Red Beans and Rice (leftover from last week’s menu)
Garlic Chicken, mac and cheese with salad
Baked Meatballs, fruit salad and peas

Menu Plan Monday

I over planned last week.  Better than under planning right?  So, we never got to the Chicken Marsala or the Vegetarian Korma.  But, I will say that the Crockpot Beef Stroganoff was fantastic.  And, the Oven Fried Boneless Chicken Thighs from the Kentucky Fresh Cookbook were also a hit.  Last, but not least, the vegetarian Cincinnati Style Chili 3 Way (using Morning Star Veggie crumbles) was also a super easy crowd pleaser.  The kids loved all of these.  And, the next day for lunch, I made a baked potato and put the vegetarian chili on top.  Very good. 

One thing we did not like….the creamy vegetarian noodle bake.  The Second Grader did finish his, only because he wanted to hurry up and go to his friend’s house!

I am very excited to try the Turkey Veggie Meatloaf Cups.  The picture shows mashed potatoes on the top swirled like icing.  To entice my kids to eat them, I may try it.  Very cute.
