Menu Plan Monday: Easy and Healthy!

Spaghetti Squash and Meat Sauce

It’s been one week since I finished the Whole30 Program and I’m still trying to keep up my vegetable in take, while keeping down my sugar and carbs.

It’s nice not having to read every single label to make sure a tiny amount of sugar is not hiding in my food.  But, I do find that my will power is not quite as strong since I don’t feel ‘obligated’ to a particular program.

Here is our menu for the week!

Spaghetti (Squash) with Meat Sauce

Ground Turkey, Onion and Green Pepper Fajitas with Fruit Salad

Steak Fajitas with Acorn Squash

Grilled Chicken, Grilled Zucchini and Grilled Asparagus (sense a theme?)

Hamburgers and Green Chopped Salad (I even shredded brussel sprouts in this and it was pretty good!)

Butternut Squash Soup

Menu Plan Monday: The Whole30 Continues!

Grilled Salmon with Avocado SalsaI have about a week and a half of the Whole30 Program left and I cannot believe I have lasted this long!  At the end of my thirty days, I’ll post about my process and how I felt.  It’s been easy at times and then super hard sometimes.  After shoe shopping with three kids by myself yesterday I was ready to whip into Orange Leaf and load up on New York Cheesecake yogurt and white chocolate chips.  But, I did not.

I’m staying strong and using Pinterest like crazy for Whole30 and paleo recipes. Here is our menu for the week.  The salmon is AWESOME!  Try it!

Menu Plan Monday: Light Chicken Salad Recipe

This week begins the season of Lent for many of us. Do you give up something for Lent?  I usually do not.  I can never come up with something I feel is ‘good enough’ to give up, so I try to do something extra instead.  Last year I tried to get up a half hour earlier a few days a week and ‘reflect’, pray and get my thoughts in order for the day.  It didn’t work.  I like my sleep.  I obviously have no will power.

A couple of weeks ago, I read on line that a friend had tried The Whole 30 Program.  While I am not a horrible eater, this is a diet that would really cause me to think about everything I put in my mouth and cut back on some things I really enjoy.  Things like milk in my tea, mayonnaise on my sandwich, wine in my glass…

I am going to do it.  And, I’ll keep you posted.  Starting Wednesday, for the next 40 days, I’m doing The Whole 30 Program.  Our menu for the week is listed below.  There are some things on here that are obviously not on the program…mac and cheese!  So, I will not be eating those.  And, we’ve already had chili, so those legumes are in my belly before Wednesday.

 Paleo Thai Basil Beef Balls and Green Beans

Chicken Salad (recipe below) ~ Fresh Vegetables with hummus

Chinese Pork Ribs ~ Apple Walnut Cole Slaw

Lemon Herbed Chicken Thighs ~ Stir Fried Bacon & Chard ~ Mac/Cheese

Ground Turkey Sliders ~ BBQ Drumsticks ~Bacon Kale Stir Fry



Chicken Salad Recipe (pictured above):

  • 3 roasted or baked chicken breast
  • ~ 1 tablespoon of mayo (while on The Whole 30 Program, I’ll mash up an avocado or hard boiled egg yolk with a little olive oil)
  • 2 green onions diced, can also use red or yellow peppers
  • 1/2 green pepper diced
  • Curry powder to taste (I like more, rather than less!)

Menu Plan Monday: BzzAgent Chicken Florentine Skillet Meal is a Hit!

Tonight, thanks to BzzAgent, we tried Kroger Skillet Meal Chicken Florentine.  It was surprisingly delicious.   I am not a big fan of processed bagged or boxed meals but thought we’d give this a try since I had the chance to review it on BzzAgent. It took 10 minutes to make and tasted fresh. The chicken was white meat and the sauce was super creamy and delicious. You should definitely give it a try. And, it’s on sale this week at Kroger!

Here is our complete menu for the week.  Super easy and fast. 

Kroger Skillet Meal Chicken Florentine, Salad and Garlic Bread (thank you BzzAgent)

Truck Stop Chili  (again, because it was awesome)

Bean Soup (using dried navy beans and ham)

Keilbasa and Cabbage

Slow Cooker Beef Stroganoff

Menu Plan Monday: Goulash, Chili and More!

Last week I was a little busy. 

Putting kids in jail.

Locked up for ‘Crimes Against Cleaning’…or maybe just for singing that stupid ‘What Did a Fox Say’ song a bazillion times.

Actually, that was for the school Fall Festival.  But, I’m considering building one of my own.

Anyway.  We were busy last week so we ate out a lot.  But, we are back on track and here is our menu. It’s really simple.  I also write for Family Friendly Cincinnati and did a compilation post of some great Fall recipes earlier this season.  From that post, we are eating:


We’ve already had the goulash and chili.  Both were fantastic.  Even my picky chili eatin’ husband loved the Truck Stop Chili.  Today we are trying the Tortilla Soup and I’m roasting the chicken as I type. 

These are great recipes for cool Fall weather.  I hope you enjoy them.

Menu Plan Monday Featuring Quiche, Pizza and Beef Stew


We are picking up another great selection of vegetables from our farm share this week and I am so excited!  Pictured above is last week’s share and I snuck a lot of it into a quiche…even my husband who does not like okra ate it and loved it…including the okra.

Here is what we are having this week:

Vegetable Beef Stew (using okra, celeriac and chard from our share) and Crusty Bread
Pasta with Fresh Basil, Garlic and Olive Oil with Salad
Chicken Strips with Mac and Cheese and Veggies
Homemade Pizza with (sauce from our tomatoes) and Salad
Vegetable Quiche (use 2 cups of chopped vegetables, 3 eggs and 1 1/2 cups milk)
Ravioli with Pasta Sauce and Shredded Cheese

For the quiche last week I used shredded potatoes, okra, chard and celery.  Just sauté in a little butter or olive oil and then add milk and eggs.  Pour in a pie crust and bake at 400 until done.

Menu Plan Monday: Featuring Mini Pizza and Girl Scout Stew

Chili and Mini Pizzas
Homemade Vegetable Beef Stew

(4 cans of Campbell’s vegetable soup with a pound of browned ground beef, plus 4 cups of water)
Sautéed Chicken Breast, Green Beans from the Farm and Corn

Mini Pizza
Tonight we made chili and mini pizzas for the kids.  These are great for picky eaters and are super
easy to make.

I unrolled a tube of crescent rolls and folded over one triangle at a time to make the dough fit into a muffin pan.  Place a spoonful of pizza sauce on each. Cover with a little mozzarella cheese and one pepperoni.  Bake at 375 until the crust is toasty and the cheese melted.  Delish.

Menu Plan Monday with Saucy Meatloaf and Roasted Garlic Chicken White Pizza

We are finally, kind of, back into the swing of things.  School started last week, and we have a new kindergartner!  So far, every day he has come off of the bus with his older brother smiling.  Let’s hope that sticks.  He wasn’t so fond of homework on a Sunday afternoon today…

With school back in session, we are gearing up for a busy Fall.  This week we have taekwondo and book club.  I am looking for easy dinners that are still tasty…who isn’t? 

Here is what we are having this week.

Helping with the meatloaf!
Vegetable Beef Stew and Grilled Cheese
Sloppy Joe Sandwiches (thank you Manwich)
Roasted Chicken
Roasted Garlic, Chicken, and Herb White Pizza with Salad (we had this pizza last week and it was delicious!  Plus, I can use the left over chicken from the roasted chicken above)

Menu Plan Monday

We’ve had an incredibly rainy week here in Northern Kentucky.  Because it was so dreary we decided on a couple of heavier menu options, Beef Bourguignon and Chili.  The Beef Bourguignon was very easy to make and I’ll post the recipe in a few days. 

Here is what we are enjoying this week:

Beef Bourguignon with Bread
Grilled Tilapia with Farm Greens
Grilled Chicken Tacos and Beans
Chili and Grilled Cheese
Greek Mini Pizzas and Salad

To make the Greek pizzas, I’ll use soft tortillas, feta cheese, chopped tomatoes and red onions.  After combining these toppings, just bake until crispy!

Menu Plan Monday: Featuring Mexican Chicken Roll Ups

How is your summer menu going?  We still have a lot of grilling on the weekly menu!  I did put more creative thought into the menu this week and found some great ideas on Pinterest….Mexican Chicken Roll Ups and Veggie Bird Nests. 

We have a birthday this week…we are entering double digits!  The Third Grader Fourth Grader (*sigh*) turns ten.

I cannot believe it. 

For the big birthday boy, we are having pizza.  Snappy Tomato, The Beast

For the rest of the week, here is our menu.  We will be getting lots of goodies from our farm share this week, but I’m not sure what.  So, I’ve listed only main courses.  Also included is a recipe using our new Citrus and Savory rub on chicken kabobs!

Grilled Chicken Kabobs with Citrus and Savory Rub
Grilled Shrimp Kabobs Brushed with Butter and Lemon Juice
Grilled Tilapia
Veggie Bird Nest with Black Beans

Because I’m a BzzAgent, I get to try out lots of cool stuff.  This week I am trying Kroger Private Selection Citrus & Savory Rub on our chicken kabobs.  We used chicken, red onion and green peppers.

I rolled the chicken in the rub and put everything on wooden skewers. 
Grilled until cooked thoroughly.


The kabobs were perfect and had a very fresh, tangy taste.  You could really smell and taste the citrus, but it was not over powering.  The Fourth Grader and Baby Girl both ate the chicken, but Middle Child did not care for it.  My husband and I loved it.  There is a variety of rubs to try, so check them out soon!  It’s a great idea for grilling on the Fourth of July.
